Chef and business owner Chris Bruno is constantly evolving along with his menu. After graduating from the culinary program at Johnson and Wales University in Providence, Rhode Island, Chris Bruno worked as a sauté chef in Cape Cod, followed by a position at Scrimshaw's Restaurant in Brookfield, Connecticut. Chris Bruno then apprenticed under an Austrian chef and a French saucier, both of whom introduced Chris Bruno to innovative and unusual ingredients and techniques. Following his training, Chris Bruno utilized his expertise to earn a position as executive chef of L'Europe Restaurant in Vista, New York. Chris Bruno returned to his hometown of Brookfield to purchase Fiddler's, an Irish pub with a classic menu and an older, darker aesthetic. After doubling the size of the parking lot, Chris Bruno remodeled the restaurant and introduced new, innovative fare alongside some of the popular classics, renaming the venue Chris's American Restaurant. Chris Bruno gave Chris's American Restaurant a modern, clean interior with sleek furniture and a zinc bar top. Chris's American Restaurant became known for its fusion cuisine, influenced by Asian and Latin flavors, including dishes such as baby clams with sake and wasabi, Paella Valenciana, and tortilla-wrapped yellowfin tuna. In addition to his success with Chris's American Restaurant, Chris Bruno utilized his position as chef and owner to provide financial support and donations of food to Family & Children's Aid, Inc., a local nonprofit agency that serves individuals and families in need of outpatient treatments and short term and long term shelter. Chris Bruno also served on the Family & Children's Aid, Inc. board as President and Vice President, earning re-election in 2010. Today, Chris Bruno continues working on his newest venture, re-creating Chris's American Restaurant into 189 Sports Cafe. Chris Bruno lives and works in Brookfield, Connecticut. Chris Bruno served as a Connecticut Restaurant Association board member in 2001.
